banana nut chocolate chip cookies!















I am constantly looking for ways to use up those brown bananas that no one wants to eat!  I have some in my freezer right now just waiting for me to find another new recipe! this is how I used up those ripe bananas a few weeks ago!  I pulled some of these cookies out of the freezer yesterday--they're perfect!  banana nut bread and a chocolate chip cookie combined--YUM!!  this recipe is a keeper!!!

ingredients:
2 2/3 cups all purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
1 cup brown sugar, lightly packed
1/2 cup white sugar
1 cup butter, softened
1 large egg
1 tsp. pure vanilla extract
2 ripe bananas, mashed (1 cup)
2 cups dark chocolate chips (or semi-sweet, or milk chocolate chips!  they all work!)
1 cup chopped pecans (or walnuts, or skip the nuts--you choose!)

instructions:
pre-heat oven to 300 degrees F. (nope, that's NOT a typo!)

combine flour, baking soda and salt, stir to combine and set aside.

In large mixer bowl blend sugars then add the butter and mix to form a paste (looks grainy!)

add the egg, vanilla and banana to the mixer and beat until smooth.

add the flour mixture and 1 cup of the chocolate chips, and the nuts (if using) and stir at low speed just until everything is combined.

use your cookie scoop (for perfectly portioned cookies!) to drop dough onto ungreased cookie sheets (about 2" apart).

use remaining chocolate chips on tops of cookies (lightly push 5-6 or onto the top of each cookie).

bake in pre-heated oven about 25-27 minutes (until edges begin to brown).

transfer cookies to cooling racks.

recipe makes about 24 cookies.

these cookies freeze very well!  put them in a single layer in ziploc freezer bags, remove as much air as you can, zip and freeze!!  I make some bags of 6 and some bags of only 2 cookies, so I only take out what I need.  

Oh! and when you take them out of the freezer, leave them inside the zipped bag to thaw!
