cauliflower crust pizza
ingredients:
1 large head of cauliflower - florets only
1/2 teaspoon kosher salt
1/2 tsp. dried basil
1/2 tsp. dried oregano
(or use the Italian Seasoning spice blend instead of basil and oregano)
1/4 tsp. garlic powder
1/4 tsp. onion powder
crushed red pepper (to taste)
1/2 cup grated parmesan cheese
1/2 cup shredded mozzarella cheese
(take the time to grate or shred your cheese from a block. the pre-shredded versions have chemicals in them to keep the cheese from sticking together.)

1 large egg
instructions:
Preheat oven to 450 degrees.
Wash and pat dry cauliflower.
Cut off the florets.
Pulse in your food processor or blender until you have small "rice size" pieces of cauliflower.
Microwave in a bowl covered with plastic wrap for 5 minutes. Get it nice and soft to eliminate that raw cauliflower taste.
Pour cooked cauliflower into a large piece of cheese cloth that is inside a strainer in the sink.
When cauliflower is cool enough to handle, wrap it up in the cheese cloth and twist to remove water.
Eliminate as much water as possible. (when you think you're done, squeeze it some more!!) Get it really nice and dry! The drier, the better!
Empty the cauliflower into a large bowl.
Add the rest of the ingredients to the bowl of cauliflower and blend thoroughly! (if the mixture is really dry and crumbly and won't stay together at all when you squeeze it in your hand, add an additional egg to help bind the ingredients together.)
1st Bake--put into the preheated oven and bake approximately 15-20 minutes until the crust starts to turn golden brown.
When crust is browned, remove from oven and add your favorite sauce and toppings.
2nd Bake--return to oven and bake until cheese is melted and crust is very nicely browned. About 7-10 minutes.
Let it cool for a few minutes and enjoy!
If you cooked the cauliflower well to remove the "raw" flavor, even if you're not a huge fan of cauliflower, you will love this pizza!
