a perfect FALL dinner.





Chicken pot pie from the grocery store freezer case? YUCK--NO WAY!  After you try this delicious Chicken pot pie recipe you won't want to eat that processed, full of preservatives, frozen kind, EVER again!

(Make the crust FIRST!  Recipe is below.) 

ingredients:
1 1/2 cups potato, diced
1 cup sweet onion, diced
1/2 cup celery, diced
1 cup carrots, diced
1/2 cup frozen peas (if you like peas, use them--if not, leave them out) 
1/3 cup butter
1/2 cup all purpose flour
2 cups all-natural, unsalted chicken stock (could use broth but, stock has more flavor!) 
1 cup half and half
1 tsp salt
1/4 tsp freshly ground black pepper
1 large rotisserie chicken--meat removed from bones and chopped
      (or about 4 cups cooked chicken, chopped)
2 pie crusts (recipe follows)

instructions:
Pre-heat oven to 400 degrees

Melt butter in large saute pan.

Cook potato, onion, celery and carrots in butter until soft (8-10 minutes).

Add flour to pan, stir constantly for 1 minute. 

Add chicken stock and half and half to pan.

Cook over medium-high heat stirring constantly until mixture is thick and bubbly.

Add peas (if using), chicken, and salt & pepper to the pan.  Stir gently to combine.  Taste to check seasonings.  

Place one pie crust into bottom (and up sides) of 2 1/2-3 quart casserole dish, prick dough multiple times with a fork.

Pour the chicken filling into the casserole dish, spread evenly.

Top with the other pie crust and seal the edges together.  Use a sharp knife to cut multiple slits in the top crust.

Bake for 45-55 minutes (or until crust is golden brown).

ingredients:
2 cups all purpose flour
1/4 tsp salt
2/3 cup cold butter
4-5 tbsp. very cold water


instructions:
Combine flour, and salt.  Cut together until mixture forms small, pea sized pieces.

Stir in enough water to moisten the flour.  

Divide dough into two pieces and flatten each piece into a round disk.  

Wrap in plastic and refrigerate until needed.

When ready to use, roll out each piece to fit your casserole dish.
